Excellent - I was hoping you'd say those were an ok alternative as that's pretty much all we're going to get in Boston this time of year. I've been craving these lately and these are going on next week's menu for sure :)

Jackie H. - Just use the diced canned chiles from Old El Paso or another brand. Or you can mail-order some if you're really interested in great chiles.

If you don't have access to fresh green chiles what do you suggest as the best alternative?

Anne - I moved away from NM 7 years ago! My mom (who's still there) just sent me half a bushel of green chiles, which I'll roast and peel and then freeze.

I made these Thursday night and they were great! So easy because I used left over roasted chicken from earlier in the week. I added 1/2 cup thick and chunky salsa to the filling and topped with more when serving. So good. Thanks for a winner!

This looks wonderful! I am one of those people that could put green chilies in anything! My favorite is an omelet with lots of green chilies and pepper jack cheese..... But really I can't wait to try these enchiladas!

I make a similar recipe except unfortunately I've never written it down. Sometimes I have too much sauce and they end up soupy and sometimes not enough and they're too dry. Also I make flat enchiladas. It's much easier and then I don't have to worry about heating up the corn tortillas (which is traditionally done in oil not water, but that makes them super fattening).
