Gretchen Noelle - I don't know much about sour dough starters, but I don't see any reason why it wouldn't work. I don't know exactly what ratios you'd want to use for the pre-ferment, but it doesn't really matter as long as you add enough flour to reach the right consistency later on.

Bagels are something I would like to try making this year. Any chance I could use a sourdough starter to begin this recipe? I have one brewing and would love to figure out more ways to use it! Maybe I could make the sponge from 1 cup starter, 1 cup flour, 1 cup water?

OH MY GOODNESS, absolute perfection.
I have this recipe marked in my book in hopes to make it soon, so now I am even more excited about it.
