My grandmother is from the Middle East and has been making falafel for years. if I may offer one recipe secret from a true native...instead of topping the falafel with chopped vegetables, you can make a Tahini Salad- its basically one cup of tahini, 1 diced small cucumber, 2 diced small tomatoes and the juice from 1-2 lemons. If you make this and let it sit while you make and fry the falafel, it created a saucy-salad that is delicious! It&#039;s just juice enough to balance out the semi-dryness of falafel and still has the tasty veggies. I hope you enjoy!</description>

Make lots! The hummus and baba ganoush keep well in the fridge, so we make up a lot. We usually have tabouleh instead of falafel. The soaked cous-cous or bulgur also keeps well in the fridge, but the parsley in the tabouleh can get a bit soggy.

And did you know you can roast eggplant, scoop out the pulp and freeze it? It makes great baba ganoush even when eggplant is out of season.</description>
