The name Pita is originated from the turkish bread "Pide", in the Ottoman times the sailors brought it to Europe and they mispronounced Pide as Pita. Since that this bread is originally from Turkey, you should taste the original one in Turkey! I bet you will notice the difference in taste... Its soo delicious!

manggy - I've actually made a lot of the recipes in this book, because it was the first bread-dedicated cookbook I had, and I got it during a period where I was particularly excited about bread-baking. Now that I'm a bit more experienced of a cook/baker than I was then, I recognize that the book isn't as hard-core as, for example, Peter Reinhart's Bread Baker's Apprentice. I'd say that Ultimate Bread is best used for inspiration rather than a precise following of their recipes. That being said, there are a few that I make unaltered - the pita, for one, as well as the spinach bread (an adaptation of Carrot Bread). I also often use the book as a reference, especially the page on glazes.

Those look fantastic, Bridget! I actually have the same book but have not tried making anything from it. Have you tried many more of its recipes? Any recommendations?

you know, i've never seen an oblong pita--they're always round! why is that? the oblong pita leaves more room for copious amounts of hummus or other fillings. they look great!

This looks wonderful! Pita bread has been on my must-make list for a while now. I love pita bread and hummus and I know the homemade version is much better than store-bought!
