I hate to admit as someone who likes to be a "foodie", but I hate cucumbers! And as a result, I've always resisted gazpacho. I try cucumbers again and again, but something about the flavor/texture/seeds/? just kills me. Maybe next summer I'll be creative enough to try making gazpacho with my own mix of veggies. Keep fighting off fall... I'm sooooo not ready yet!

I've never really understood the allure of gazpacho. I've made it and while it was okay - it was still cold soup. Edible but not really worth repeating. While yours looks pretty, I think I'd still be tempted to pop it in the microwave for a minute or two.

I too am not ready to give up on summer produce, but I'm afraid the cool climate here is leaving me without a choice! Your gazpacho looks good enough to eat! Have you ever tried ajo blanco? It's white version of gazpacho, made with almonds and garlic, and topped off with halved seedless green grapes. It's soooo delicious!

I've never had gazpacho before either-- it's the same problem of your youth :) Actually, cold savory food is not really very popular in this country, despite the heat! It's just a matter of getting used to something I guess... I do love how it looks and the vivid colors :)

I am absolutely wild about cold soups and I love gazpacho! I have a variation that is watermelon based instead of tomato and it is a neat "fruit-soup". I like the delicate, light flavors of cold soups - to often I get gazpacho that is overly-spiced.
