And as a result, I've always resisted gazpacho. I try cucumbers again and again, but something about the flavor/texture/seeds/? just kills me. Maybe next summer I'll be creative enough to try making gazpacho with my own mix of veggies. Keep fighting off fall... I'm sooooo not ready yet! I've made it and while it was okay - it was still cold soup. Edible but not really worth repeating. I have a variation that is watermelon based instead of tomato and it is a neat "fruit-soup". I like the delicate, light flavors of cold soups - to often I get gazpacho that is overly-spiced.
