This is kind of shortcutty and lame, but I spray my corn tortillas with Pam, one at a time, and stack them up. Then put the whole stack in the microwave for 30 seconds or so, until all of them are heated through. Voila! Soft, flexible, delicious corn tortillas! Works like a charm!

Mmmm, beautiful! This would be perfect on a day when the next meal may well be dinner, and someone else would lend a hand with the dishes. ;-)

Add eggs, wrap them up in a large flour tortilla to make a burrito, and you'll have what they call a California Burrito here in SoCal. We love them... but they're definitely a once-in-a-while treat. Our local taco stands sell them for about $3.50 in the mornings!
