		<description>Nicole - I wonder if you&#039;re overbaking your cookies.  Do you have an oven thermometer?  You should take the cookies out of the oven before they&#039;re completely cooked.  They&#039;ll continue cooking out of the oven on the hot baking sheet for a few minutes.  All of these recipes should give you a cookie that stays soft after it cools, for at least a couple of days.</description>
