		<description>About the tastes: Waxy is a by product of the chocolate maker, but the flavor of the chocolate has everything to do with the area the cacao bean is grown. For instance, the beans I buy from Ecuador have a very fruity flavor while Nicaraguan beans are so much more like coffee, or earthy flavored. This is because Theobroma is an air feeder. If you grow cacao next to a pineapple orchard, you will get hints of pineapple notes in the beans.

		<description>I have often wondered about the quality of chocolate.  I usually use Ghirardelli chocolate, but have thought that perhaps Callebaut or Valhrona would be better.  I&#039;m glad to find out that I can keep using the same old chocolate :)  The truffles look great too- I&#039;m planning on making truffles sometime in December.</description>

		<description>I agree that there is some &quot;snobishness&quot; about using only the &quot;best&quot; (and usually the most expensive) chocolate to make your own truffles - but as you said - at the end of the day, its all about personal taste.  Your average person is not really going to notice the subtle differences between the chocolates unless they are fussy about the kind of chocolate they eat.
