I thought I hated sweet potatoes until last year! Now I love them -- especially as fries sprinkled with chili powder and cumin. Yum. Breakfast hash is one of my husband's and my favorite choices. If I used sweet potatoes I have to mix it half-and-half with regular potatoes to get him to eat it. Yours looks fantastic and may inspire our next "fancy breakfast." Sweet potatoes were something I discovered in my adult life and we only ever eat them savory. My hubby loves them sliced into wedges & roasted with oil & salt.
