Jen – I used Empire because that’s what I tend to keep around for snacking, but I think any firm apple would work. The only one I can think of that I wouldn’t use is McIntosh.

Nice! I am very impressed with the syrup made from the peels and cores of the apples…I love the idea that nothing goes to waste! I think I may try this dessert for Thanksgiving.
