gingered carrot cookies

I was complaining to my sister about these cookies, all, wwahhh! I don’t like carrot desserts! when she told me that her husband had made carrot-raisins-nut-coconut muffins that day, and her 4-year-old refused to eat them. “I don’t like the carrot muffins”, he claimed.

Great, I have the tastes of a 4-year-old.

On the other hand, cookies than contain vegetables are clearly acceptable for breakfast and thus the perfect detour from my no-dessert-before-beach-trip rule. And judging by how many of these I ate, I do not, in fact, have the tastes of a four-year-old. I’m not sold on carrot cake, but carrot cookies, apparently, I can do.

Natalia chose these for Tuesdays with Dorie, and she has the recipe posted.

These look great! Though I can’t quite figure out how to get the recipe from the link…

  2. love your photos! these weren’t the most attractive cookies we’ve ever made, but they were surprisingly good.

  3. I love your carrots in a jar! These were so good. I’m about to have one with my coffee right now. 🙂

  4. they look great! i bet your nephew would like them, too!

  5. Perfect diversion from the no desserts rule! 🙂 Love your photos!

  6. Yum! I like carrot cake, but I’ve never tried any other dessert with vegetables in them, unless you count sweet potatoes or pumpkin.

    Wei Wei

  7. These were a great surprise for me too. Your pics are great!

  8. Im glad you enjoyed! I love cookies of anytime..if they have sugar in them that’s all I need!

  9. Your photos are excellent. Love the collages and the color tones. beautiful. Bet that these cookies were gorgeous!

  10. Totally breakfast food. Actually, given your daily vegetable needs, I hope you polished off the whole batch in one day. Just looking out for your health, you know.

  11. i love the pictures, they look yummy enough 🙂

  12. Ciao ! Thanks for joining me and I envy your wonderful photos. I’m glad they were not too bad in the end ….!

  13. And what’s wrong with having the tastes of a 4YO!!! Sugar is OK!!

Glad you ended up liking these.

  14. mmm maybe it’s time to give carrot cake another shot? with lots of zesty ginger? I bet that makes all the difference!

you should use your eyesight as an excuse to eat even more! these look fantastic and i’m going to make myself some right now! (ok, not right now, but very soon…once i go harvest some carrots).

  16. I like the way you think about vegetables and breakfast. Nice pictures!

  17. I think these would work or breakfast. I thought they were more like scones than cookies. They do contain veggies but way more butter, which makes everything better!

  18. I’ve seen these in Dorie’s book, but have never been tempted to try them. I’m intrigued now by all of the different opinions I’ve read from you and other TWD bakers. I may have to try these and see for myself! (But without the raisins!)

  19. these totally work for breakfast, esp if you make ’em bigger. i loved em.

    your pictures are great.

  20. Please… how can you NOT like these! 🙂 They look wonderful – like you meant to like them! Love the carrot in the jar decor – so fitting. Glad you enjoyed one (or two of them)! They’re worth their weight in carrots!

  21. These were a pleasant surprise for me too! I like carrot cake but the idea of carrot cookies didn’t excited me until I tried the first one. I topped mine with maple glaze for a bit of extra deliciousness 🙂

  22. Those look dangerous. I could imagine sucking down a dozen with a glass of ice cold milk. I think I will need to step away from the blog now….
