gingered carrot cookies

I was complaining to my sister about these cookies, all, wwahhh! I don’t like carrot desserts! when she told me that her husband had made carrot-raisins-nut-coconut muffins that day, and her 4-year-old refused to eat them. “I don’t like the carrot muffins”, he claimed.

Great, I have the tastes of a 4-year-old.

On the other hand, cookies than contain vegetables are clearly acceptable for breakfast and thus the perfect detour from my no-dessert-before-beach-trip rule. And judging by how many of these I ate, I do not, in fact, have the tastes of a four-year-old. I’m not sold on carrot cake, but carrot cookies, apparently, I can do.

  6. Yum! I like carrot cake, but I’ve never tried any other dessert with vegetables in them, unless you count sweet potatoes or pumpkin.

  17. I think these would work or breakfast. I thought they were more like scones than cookies. They do contain veggies but way more butter, which makes everything better!

  18. I’ve seen these in Dorie’s book, but have never been tempted to try them. I’m intrigued now by all of the different opinions I’ve read from you and other TWD bakers. I may have to try these and see for myself! (But without the raisins!)

  21. These were a pleasant surprise for me too! I like carrot cake but the idea of carrot cookies didn’t excited me until I tried the first one. I topped mine with maple glaze for a bit of extra deliciousness 🙂

  22. Those look dangerous. I could imagine sucking down a dozen with a glass of ice cold milk. I think I will need to step away from the blog now….
