brown sugar blueberry plain cake

Dave and I have fun during the winter teasing his family in Ohio about how while they’re bundling up and shoveling snow, we’re sitting outside drinking margaritas. They curse us, and then I try to temper this obnoxiousness by claiming that we’ll pay the price in the summer.

But I’m not sure we will. We have a good system for dealing with the heat. It involves a kiddie pool full of water to dip our feet in, frequent breaks to come inside and cool off (the perfect time to prep dinner), and, of course, margaritas.

I suspect that summer in the desert will be particularly awesome, and not just because of the heat that we love. There are also tomatoes, corn on the cob, and blueberries so cheap the stores are almost giving them away. Mostly I’ve been eating them straight, as the best snack you could ever ask for, but I’m never against adding my favorite fruits into dessert either. But as soon as the cake is baked, I’m heading back outside with my margarita.

Cindy chose this cake for Tuesdays with Dorie, and she has the recipe posted. I doubled the salt and used a 9×9-inch pan instead of 7×11-inch. I originally had some ideas of things I might tweak for next time, but to be honest, as good as this cake was, I’ve had other blueberry cakes that I like more.

  2. We used to have a kiddie pool when we lived in the city. It was mostly for the dogs. Now the dogs swim in the horse troughs and we dip in the lake. Apparently, we’ve gone country.
    My husband loves blueberry things and I think he’d love this for breakfast…or maybe I’ll look into the other cakes you’ve made and enjoyed more.

    It’s funny because in Ohio right now we are entering into what seems to be our hottest summer yet! It’s only the beginning of June and we have already seen several days in the mid to high 90’s and I don’t think it is going to get better anytime soon. I actually just bought a kiddie pool (with cupholders!) yesterday — and I do not have kids 🙂

    I love blueberry things, especially when they are cakey. I am going to have to give this one a try!!

    Abbey – You guys can’t win in Ohio! We don’t have kids either. Or dogs. Just hot feet that feel good in a pool of cool water!

    Dave – Probably because we got our pool for 10 bucks at the local Walmart.

    I had a feeling it was a bad idea to mention other blueberry cakes without a specific recipe! Both this Blueberry Poppy Seed Brunch Cake and Blueberry Crumb Cake are wonderful, although they’re more breakfasty than desserty. My mom has a recipe for a blueberry boy bait that I really like; I haven’t compared the two recipes directly, but I suspect that Cooks Illustrated’s recipe is similar, and you can find that one online here.
