vegetarian chili

When my sister plans meals for once-a-month freezer cooking, she usually tests a small batch of a recipe before making a larger batch to freeze. This is good practice, I recently learned. A few months ago, I made vegetarian chili to bring on a camping trip, and even though I was experimenting with the recipe, I was confident enough that it would turn out great that I made a huge batch and froze half. Mistake!

There are a lot of recipes where I think ground meat is just extraneous, and chili is a great example. There are so many other flavorings in chili that it doesn’t usually taste beefy, and the beans provide plenty of protein, so the meat isn’t nutritionally required either. It’s just filler, and expensive, sort of unhealthy filler at that.

When I noticed that my favorite vegetarian chili recipe was very similar to my favorite beef chili recipe, except for the beef, I decided to combine parts of each that I liked. Where I screwed up the first time was in not taking into account that with less filler, I’d need less tomatoes as well. The result was (a huge pot of) chili-flavored spaghetti sauce (that I had to share with friends on the camping trip – sorry guys!).

And before I could give it another try, I had to finish all of the frozen way-too-tomatoey stuff in the freezer. When I did finally make vegetarian chili again, I knew exactly what changes I wanted to make. I made a smaller batch this time, just in case, but wouldn’t you know it that I totally nailed it this time with a rich, spicy, meaty-even-without-meat bowl of chili that gets even better when topped with an assortment of garnishes.

One year ago: Salmon Cakes, Flaky Biscuits, Hashed Brussels Sprouts – I made almost this exact same meal again recently (different biscuits though), and it’s just so good.  Restaurant quality food for sure.

Vegetarian Chili (adapted substantially from Jeanne Lemlin’s Vegetarian Classics and Cooks Illustrated’s The New Best Recipe)

I like to chop up the tomatoes a bit before adding them to the chili. I usually just stick a pair of kitchen shears into the can of tomatoes and start snipping.

I’ve never actually added the butter, in an effort to reduce the fat in the recipe. However, I’m guessing it helps mimic the richness that beef would provide.

2 tablespoons olive (or vegetable) oil
2 medium onions, diced
1 medium red bell pepper, cored, seeded, and finely diced
6 garlic cloves, minced or pressed through a garlic press
3 tablespoons chili powder
1 tablespoon ground cumin
1½ teaspoons ground coriander
¾ teaspoon red pepper flakes
1 teaspoon dried oregano
⅛ teaspoon cayenne pepper
1 (28-ounce) can diced tomatoes, undrained
2 (15-ounce) cans kidney beans, drained and rinsed
1 (15-ounce) can black beans, drained and rinsed
½ teaspoon salt
1 tablespoon soy sauce
1 tablespoon butter (optional)
Garnishes: lime wedges, sour cream, cheddar cheese, scallions, red onion, cilantro

1. Heat the oil in a large Dutch oven over medium heat. Stir in the onions, bell pepper, garlic, and spices and sauté, stirring occasionally, until the vegetables are softened and beginning to brown, about 10 minutes.

2. Add the tomatoes, beans, salt, and soy sauce. Increase the heat to medium-high and bring the chili to a boil, then reduce the heat to low. Cook, covered, at a low simmer for one hour, stirring occasionally. If the chili is too thin, cook uncovered until it’s your preferred consistency. Stir in the butter and serve with the garnishes.

My sister does once-a-month-cooking, so once each month (or a little longer), she and her husband spend a good portion of the weekend stocking their freezer with easily-reheatable food. I don’t think I’m cut out for this. For one thing, when she was planning her last cooking fest, I advised her to split up the cooking over several nights, and then it wouldn’t take up so much of her weekend. Which pretty much defeats the purpose, because if you’re going to cook every night, you might as well just be making dinner.

Also, I have a tendency to hoard food in my freezer. I get it in my head that I can’t possibly use the lasagna or potstickers or chili in my freezer, because then what if I have some sort of dinner emergency one night and need something super easy? Not that this has ever been an issue.  Still, whenever I make a meal that takes well to freezing, I make extra and put some in the freezer. These chicken strips are perfect for storing in the freezer.

Also, they’re delicious. The coating, made from cornflakes, is crunchy and a little sweet, and the chicken is moist and seasoned from its brine. The strips, after being dipped in flour, butter, and cornflake crumbs, are baked, so there’s no frying mess to deal with and hopefully they’re a little less fattening (except for the whole dipped in butter thing, of course).

They’re so good, in fact, that even the extras that were stored in the freezer didn’t last too long. They were right in front, so every time I opened the freezer, I was reminded of how good these are. I couldn’t resist them long.

One year ago: Fish Tacos – we’ve had this for dinner twice in the last two weeks

Crispy Baked Chicken Strips

Serves 4

To freeze these, spread them on a baking sheet (without the rack) after coating and before baking. Place the pan in the freezer and chill for about half an hour, until mostly firm. Transfer the strips to freezer bags. When ready to cook, defrost them and continue with step 4 of the recipe.

¼ cup table salt
4 boneless skinless chicken breasts, cut into 1-inch strips
¼ cup flour
6 tablespoons butter, melted
2 cups finely crushed corn flakes cereal

1. Dissolve the salt in 1 quart cold water. Add the chicken, cover, and refrigerate for 30 minutes. Remove the cutlets from the brine and pat dry.

2. Adjust an oven rack to the middle position and heat the oven to 400F. Place an oven-safe baking rack in a baking sheet.

3. Place the flour and butter in separate small bowls. Add the crushed cereal to a medium-sized bowl. Dip the chicken pieces in the flour, then the butter, then the cereal. Place the coated chicken strips on the baking rack in the baking sheet.

4. Bake 15-20 minutes, until chicken is no longer pink. Serve.

potstickers

I am not good at timing my cooking. I had grand plans for these potstickers to be part of an all day sporadic eating event during the NFL championship games. We’d eat potstickers in the first game, hot and sour soup at the beginning of the second game, and dessert sometime later. But my timing is so bad that I ended up sitting down with a plate full of potstickers right during halftime of the first game. Boring!

My plan got another wrench thrown in it after our first plate of potstickers, when we looked at each other and both said “we want more!” It’s always like that when I make potstickers – neither of us can ever get enough!

Another thing that’s great about potstickers is that they adapt to your schedule. You can make the filling and then forget about it until you’re ready, even if it isn’t until the next day. You can fill the potstickers and then forget about them for months! This time, I filled enough for our first serving, and then filled some more when we decided that we absolutely had to have more. I left the rest of the filling in the fridge overnight, formed more dumplings the next afternoon, and steamed them when we wanted to eat dinner. I was planning on freezing some for later, but it was clear early on that that wasn’t happening.

And you know what else? They’re actually healthy. Look at those ingredients – 3 cups minced cabbage, scallions, egg whites. Two tablespoons of oil in the whole thing, and to be honest, you won’t need that much with a good nonstick pan. I bet I only used a few teaspoons. So we can eat all we want!

Pork and Cabbage Dumplings – Wor Tip (from Cooks Illustrated)

We prefer to use gyoza wrappers. You can substitute wonton wrappers, but the cooking time in step 4 will be reduced from 10 minutes to 5 or 6 minutes and note that the yield will increase to 40 potstickers (see chart below Step 4 for more information). These dumplings, also known as potstickers, are best served hot from the skillet; we recommend that you serve the first batch immediately, then cook the second batch. To freeze, place filled, uncooked dumplings in the freezer in a single layer on a plate until frozen, then transfer to a storage bag. There’s no need to thaw frozen dumplings; just proceed with the recipe.

Makes 24 dumplings, 6 first course servings

Filling
3 cups minced napa cabbage leaves (about ½ medium head)
¾ teaspoon table salt
¾ pound ground pork
4 minced scallions (about 6 tablespoons)
2 egg whites, lightly beaten
4 teaspoons soy sauce
1½ teaspoons minced or grated fresh ginger
1 medium garlic clove, minced or pressed through a garlic press (about 1 teaspoon)
1/8 teaspoon ground black pepper

Dumplings
24 round gyoza wrappers (see note)
2 tablespoons vegetable oil
1 cup water, plus extra for brushing
1. For the filling: Toss cabbage with the salt in colander set over a bowl and let stand until cabbage begins to wilt, about 20 minutes. Press the cabbage gently with rubber spatula to squeeze out any excess moisture, the transfer to a medium bowl. Add the remaining filling ingredients and mix thoroughly to combine. Cover with plastic wrap and refrigerate until mixture is cold, at least 30 minutes or up to 24 hours.

2. For the dumplings: Working with 4 wrappers at a time (keep the remaining wrappers covered with plastic wrap), follow the photos below to fill, seal, and shape the dumplings using a generous 1 teaspoon of the chilled filling per dumpling. Transfer the dumplings to a baking sheet and repeat with the remaining wrappers and filling; you should have about 24 dumplings. (The dumplings can be wrapped tightly with plastic wrap and refrigerated for up to 1 day, or frozen for up to 1 month. Once frozen, the dumplings can be transferred to a zipper-lock bag to save space in the freezer; do not thaw before cooking.)

3. Line a large plate with a double layer of paper towels; set aside. Brush 1 tablespoon of the oil over the bottom of a 12-inch nonstick skillet and arrange half of the dumplings in the skillet, with a flat side facing down (overlapping just slightly if necessary). Place the skillet over medium-high heat and cook the dumplings, without moving, until golden brown on the bottom, about 5 minutes.

4. Reduce the heat to low, add ½ cup of the water, and cover immediately. Continue to cook, covered, until most of the water is absorbed and the wrappers are slightly translucent, about 10 minutes. Uncover the skillet, increase the heat to medium-high, and continue to cook, without stirring, until the dumpling bottoms are well browned and crisp, 3 to 4 minutes more. Slide the dumplings onto the paper towel-lined plate, browned side facing down, and let drain briefly. Transfer the dumplings to a serving platter and serve with scallion dipping sauce (see related recipe). Let the skillet cool until just warm, then wipe it clean with a wad of paper towels and repeat step 3 with the remaining dumplings, oil, and water.

Choosing the Right Wrap
Tasters preferred the slightly chewy texture of gyoza-style wrappers to thinner wonton wrappers, but both styles produced terrific potstickers. Although we developed our recipe using round wrappers, square or rectangular wrappers can be used as well. Here’s how to adjust filling amount and steaming time. Because the smaller wrappers yield more dumplings, you’ll need to cook them in multiple batches.

Instructions for different size wrappers:
Round gyoza (3¾ inches diameter), fill with 1 rounded tablespoon, steam for 10 minutes
Round wonton (3¾ inches diameter), fill with 1 rounded tablespoon, steam for 6 minutes
Square wonton (3 3/8 inches square), fill with 2 rounded teaspoons, steam for 6 minutes
Rectangular wonton (3¼ inches by 2¾ inches), fill with 1 rounded teaspoon, steam for 5 minutes

Scallion Dipping Sauce

The sauce can be refrigerated overnight.

Makes ¾ cup

¼ cup soy sauce
2 tablespoons rice vinegar
2 tablespoons mirin
2 tablespoons water
1 teaspoon chili oil (optional)
½ teaspoon toasted sesame oil
1 medium scallion , white and green parts, minced

Combine all ingredients in bowl and serve.

As much as I love my friends and family, I am terrible at getting gifts out to them on time. Invariably, I won’t start looking for gift ideas until after I’ve made the call (or email or text message) to wish the person a happy birthday

And that is why my good friend Sidfaiwu, whose birthday is before Thanksgiving, got Christmas cookies along with the rest of his birthday gift.

These cookies are as much a Christmas tradition in my family as santa or the decorated tree. Although I can’t remember a Christmas without them, this is my first time making them.

The dough itself is simple – a classic cookie dough recipe where the butter and sugars are creamed together, the eggs are beaten in, and the pre-mixed dry ingredients are added. It’s in the shaping that the recipe gets interesting. The dough is divided into equal portions, colored, patted into rectangles, then stacked and cut to form cookies. This is where the recipe really shines, because it’s an easy way to make an impressive variety of shapes.

Slice a Fancy Cookies (from Family Circle)

I was working from a shorthand recipe that I’d copied in a hurry a few years ago.  This is the real version (updated from my original post), although I’ve modernized it a bit.  Apparently I made the “ribbon fancies”.  I would just call them striped, but what do I know.

Makes about 12 dozen cookies

4 cups (18 ounces) unbleached flour
1 teaspoon baking powder
1 teaspoon salt
¼ teaspoon baking soda
1¼ cups (2½ sticks) butter
1 cup (7 ounces) firmly packed light brown sugar
½ cup (3 1/2 ounces) granulated sugar
2 eggs
2 teaspoons vanilla
1. Mix flour, baking powder, salt, and baking soda.
2. Beat butter with brown and granulated sugars until fluffy; beat in eggs and vanilla. Blend in flour mixture.
3. Divide evenly into 3 bowls. Flavor, shape, and decorate each variety, following recipes below.
4. Slice frozen cookie dough into 1/4-inch sections and place on ungreased cookie sheets. Bake at 350º for 8-10 minutes. Remove from cookie sheets to wire racks; cool completely.

Ribbon Fancies

Divide one bowl of dough into three equal portions. Tint one third red, one green and leave one plain. Roll out each section into a 9 x 3-inch rectangle between sheets of parchment (or wax) paper; chill in freezer 10 minutes; halve each rectangle lengthwise. Brush tops very lightly with milk. Lay one plain stripe, on top of that place a green, then red, than green again, and red, and then white layer on top of each other. Wrap in wax paper and freeze for several hours at least. When ready to bake, follow above directions.

Pinwheel Twirls

Divide second bowl of dough in half. Tint one half red or green; leave other half plain. Roll out each half to a 9×9-inch square between sheets of parchment paper; peel off top sheets. Lay tinted dough, paper side up, on top of plain dough. Peel off paper. Roll up doughs tightly, jelly-roll fashion. Wrap in wax paper; freeze at least several hours. When ready to bake, follow above directions.

Checkerboards

Divide third bowl of dough in half. Blend ½ square unsweetened chocolate, melted and cooled, into one half; leave other half plain. Roll out each half to a 9×3-inch rectangle, chill. Cut each rectangle lengthwise into 8 strips, each 3/8-inch wide. Carefully lift a chocolate strip with a long-bladed spatula and place on a clean sheet of wax paper; lay a plain strip close to it, then repeat with a chocolate and plain strip to make a four-stripe ribbon about 1½ inches wide. Brush very lightly with milk. Build a second, third, and fourth layer, alternating plain and chocolate strips each time and brushing each layer with milk before adding the next one. Wrap in wax paper; freeze. When ready to bake, follow above directions.
