Sometimes you want the comfortable and familiar. You want brownies. You want vanilla or strawberry ice cream. And who am I to begrudge you a good ol’ chocolate chip cookie craving?

Sometimes, though, maybe you want something more interesting, maybe even a bit challenging. You want something more adult. But you should keep the chocolate. This is dessert we’re talking about here, a treat, not a chore.

For those times, you can add fruit. Nuts, maybe. Use whole grains and unrefined sugar. Add…flowers?  Why not?

I made a half batch of these for a gathering of myself, Dave, and two of our guy friends. They were all gone (except one, which was perfect with coffee the next morning) by the end of the evening, and I swear I didn’t eat them all myself! Grown-up food isn’t so bad.

Whole Wheat Biscotti with Pistachios, Apricots, Chocolate, and Lavender
(adapted from 5 Second Rule)

Makes 72 1-inch bites

You can probably choose one type of sugar and one type of flour. I was hedging my bets on the healthier additions.

I used 6 ounces of chocolate, and it was delicious but too much for the dough to hold onto, so I’ve reduced it slightly.

1 cup (4.8 ounces) whole wheat flour
½ cup plus 2 tablespoons (3 ounces) all-purpose flour
¼ cup (1.75 ounces) turbinado sugar
¼ cup (1.75 ounces) brown sugar
1 teaspoon baking powder
½ teaspoon salt
2 extra-large eggs
3 tablespoons olive oil
2 teaspoons vanilla extract
4 ounces (¾ cup) semisweet chocolate chips, chopped
½ cup finely diced dried apricots
½ cup pistachios, rough-chopped
1 teaspoon dried lavender

1. Heat the oven to 350 degrees. Line a baking sheet with a silicone baking mats or parchment paper.

2. In a large mixing bowl, whisk the flours, sugars, baking powder, and salt. In a separate bowl, whisk the eggs until well combined, then add the olive oil and vanilla extract. Pour the egg mixture into the flour mixture and use a rubber spatula to stir the ingredients until the dry ingredients are evenly moistened. Stir in the chocolate, apricots, pistachios, and lavender.

3. On a dry work surface, knead the dough until it’s no longer sticky. Transfer it to the prepared baking sheet and press into a ½-inch thick rectangle measuring about 10 by 6 inches. Bake for 22 to 25 minutes, or until the top no longer looks raw. Transfer the baking sheet with the dough to a cooling rack. Let dough cool for at least 5 minutes.
4. Transfer the dough to a cutting board. Cut each block into 6 long strips, then cut each strip at 1-inch intervals to form squares. Transfer the pieces back to the baking sheet. Bake for 10-14 minutes, until the squares just begin to brown at the edges. Transfer the cookies to a cooling rack to cool completely.

One of the disadvantages-that-isn’t of living in New Mexico is that, with year-round access to a freezer full of Hatch green chiles, pretty much every other chile gets neglected. In the first three years after we moved here, I didn’t cook with poblanos, serranos, anaheims, or even chipotle chiles.  Hatch green (and, not as often, red) chile was the focus.

This year we spent four hours peeling, seeding, chopping, and freezing Hatch green chiles only to realize afterward that this batch was a dud, with no flavor at all.  It’s unfortunate, but our pizzas, burgers, and beans have all been disappointing since we’ve started rationing out last year’s far superior chiles.  We’re impatient for next year’s harvest, but we’ve got five months to go.

The upside is a resurgence of alternate chiles in our kitchen. Last week I made some smoky guacamole with roasted red peppers and poblanos, and chipotles are no longer languishing in the back of the freezer, forgotten. This recipe is a significant contribution to the disappearing chipotles, because any dish that takes twenty minutes to deliver a healthy bowl of spicy sauce and shellfish is going to be a favorite. Next year, it’ll be even better, when I use chipotles together with Hatch chiles, but for now, chipotles are all I’ve got.

Chipotle Shrimp (adapted from Rick Bayless’s Mexican Everyday via Pink Parsley)

Serves 4 as a main course

1 (28-ounce) can diced fire-roasted tomatoes in juice
2-3 canned chipotles en adobo
1 tablespoon chipotle canning sauce
1 tablespoon vegetable oil
3 garlic cloves, minced or pressed through a garlic press
salt
2 pounds shrimp, peeled and deveined
1 cup rice, cooked (about 3 cups cooked rice)
about ¼ cup loosely packed, roughly chopped cilantro

1. Process the tomatoes, chipotle chiles, chipotle sauce, and ½ teaspoon salt in the blender until pureed.

2. Heat the oil in a large skillet over medium heat. Add the garlic and stir until fragrant, about 1 minute. Add the tomato mixture and cook, uncovered, for about 5 minutes, stirring frequently. Taste and season with salt if necessary.

3. Add the shrimp to the pan, and cook, stirring constantly, until the shrimp are pink and curled up, about 6 minutes. Serve over rice with cilantro.

Despite my penchant for baking, I’ve only very rarely baked by request. So when a coworker asked me to help plan for another coworker’s bridal shower, mentioning while studiously avoiding eye contact that one thing they needed someone to do was prepare dessert, I jumped at the excuse to bake, but then I got nervous.

It’s one thing to bring extra crumbly rice krispy treats to set out in the office kitchen, where nearly anything sweet is appreciated during a long work day, but the standards are significantly higher for someone’s bridal shower. Complicating matters was the timing, because the party was scheduled for after work on a Thursday, so I would need to do everything during weekday evenings. (I know you can freeze cupcakes, but I haven’t tried it myself and wasn’t ready to experiment.)

Neither the bride nor the host had any suggestions, so I decided that cocktail-inspired cupcakes would be fun for a bridal shower. I wanted a chocolate option and a fruit option and settled on Guinness cupcakes with whiskey ganache and Bailey’s buttercream (based on the controversially titled Irish Car Bomb drink, in which a shot of whiskey and Bailey’s is added to Guinness, and the whole mess has to be chugged before it curdles) and margarita cupcakes – lime cupcakes brushed with tequila and triple sec and topped with tequila lime swiss meringue buttercream.

A couple days in advance, I mixed up the Bailey’s buttercream and attempted the whiskey ganache. Unfortunately, I learned that if the cream is too hot when you mix it with the finely chopped chocolate to make ganache, the mixture will curdle. I went home at lunch the next day to try to save my curdled ganache, but it remained curdled. (It’s in my freezer now. Does anyone have any suggestions on what I can do with broken ganache? Some sort of cake with chocolate and cream maybe?) Wednesday evening, I still needed to bake both batches of cupcakes, make the swiss meringue buttercream, remake the ganache, brush the margarita cupcakes with alcohol, fill the chocolate cupcakes, and frost both. Thursday I would go home at lunch and apply garnishes.

One problem I consistently have with cupcakes is the wrappers pulling away from the cake, and I’ve finally figured out that this is a result of moisture building up, probably in large part from the frosting, while the cupcakes are stored tightly overnight. I only loosely covered these overnight, because loose wrappers would not do for the party, and only a few wrappers separated just slightly.

Surprisingly, everything went off without a hitch, and I wasn’t even up all night on Wednesday. Even the hardest part of preparing cupcakes, getting them to your destination without mussing them, went smoothly. My first attempt at baking for an event was a definite success that gave me more confidence to do it again – which is good, because I had agreed to make dessert for the rehearsal dinner just a week later.

Guinness Chocolate Cupcakes with Bailey’s Buttercream (slightly adapted from Smitten Kitchen)

Makes 24

For the cupcakes:
1 cup stout (such as Guinness)
16 tablespoons (2 sticks) unsalted butter
¾ cup unsweetened cocoa powder (preferably Dutch-process)
2 cups all-purpose flour
2 cups sugar
1½ teaspoons baking soda
¾ teaspoon salt
2 large eggs
⅓ cup sour cream

For the filling:
8 ounces bittersweet chocolate, finely chopped
⅓ cup heavy cream
2 tablespoons butter, room temperature
1 to 2 teaspoons Irish whiskey (optional)

For the frosting:
4 cups (16 ounces) confections sugar
8 ounces (1 stick) unsalted butter, at room temperature
6 to 8 tablespoons Irish cream (or milk or heavy cream)

1. Make the cupcakes: Adjust a rack to the middle position and heat the oven to 350°F. Line 24 muffin wells with liners. In a medium saucepan over medium heat, bring 1 cup stout and 16 tablespoons of butter to a simmer. Add the cocoa powder; whisk until the mixture is smooth. Cool slightly.

2. Whisk the flour, sugar, baking soda, and ¾ teaspoon salt in a large bowl. With a stand mixer fitted with the paddle attachment (or in a large bowl with a handheld mixer), beat the eggs and sour cream to blend. Add the stout mixture to the egg mixture and beat just to combine. Add the flour mixture and beat briefly on slow speed. Using a rubber spatula, fold the batter until completely combined.

3. Divide the batter among the cupcake liners, filling them about ⅔ full. Bake until a toothpick inserted into the center of a cupcake comes out clean, rotating the pan once front to back if your oven bakes unevenly, 18-22 minutes. Cool cupcakes on a rack completely.

4. Make the filling: Place the chocolate in a heatproof bowl. Heat the cream until just simmering and pour it over the chocolate. Let it sit for one minute and then stir until smooth. (If this has not sufficiently melted the chocolate, you can return it to a double-boiler to gently melt what remains. 20 seconds in the microwave, watching carefully, will also work.) Add the butter and whiskey (if using) and stir until combined.

5. Fill the cupcakes: Let the ganache cool until thick but still soft enough to be piped, about an hour. Meanwhile, using a 1-inch round cookie cutter, an apple corer, or a paring knife, cut the centers out of the cooled cupcakes about ⅔ to the bottom. Fill the holes with the ganache, using either a piping bag or a spoon.

6. Make the frosting: With a stand mixer fitted with the whisk attachment (or in a large bowl using a handheld mixer), whip the butter very light and fluffy, 2-3 minutes. Reduce the heat to low and gradually add the powdered sugar, then the Irish cream. Frost the cupcakes with the Bailey’s buttercream; serve.

I did something very, very stupid with this recipe. It calls for 1½ bags of butterscotch chips. The thing is, I don’t like butterscotch chips very much, so I didn’t want half a bag leftover that I would feel obligated to keep around indefinitely, where it would take up valuable cabinet space. I only bought one bag, deciding to wing it (always trouble) for the remainder.

I started regretting this shortly after leaving the store. Because obviously I could have just dumped that half bag of chips into a batch of chocolate chip cookies and they would be hardly noticeable. Or, heaven forbid, I could just throw a handful of butterscotch chips away if I didn’t plan to use them.

Instead of making an extra trip back to the store, I forged ahead. Things looked bad from the beginning when I measured out my single bag of butterscotch chips and it was even less than I was expecting. I still forged ahead, adding in a couple tablespoons of butter and another couple tablespoons of corn syrup to make up for the fat and sugar I was missing from the extra chips. I knew I was in bad shape when I poured in the entire box of cereal, and it filled my pot to the brim. I thought about shoveling some of the cereal out before mixing it into the melted butterscotch and peanut butter mixture but stubbornly forged ahead instead.

No one is surprised that my rice krispy bars were a crumbly mess, are they? There simply wasn’t enough glue to hold together all that cereal. They tasted good, like that classic combination of peanut butter and chocolate, but, while I did manage to cut a few clean squares, they’re so delicate that they crumble as soon as they’re touched. Of course I ate them anyway, because they’re butterscotch peanut butter chocolate rice krispy bars. Crumbles aside, what’s not to love? But next time, I’ll follow the directions, half bag of extra chips be damned.

Butterscotch Peanut Butter Chocolate Rice Krispy Treats (slightly adapted from Cara’s Cravings)

About 32 tall bar cookies

3 cups (1½ to 2 11-ounce bags) butterscotch chips
1½ cups (13½ ounces) creamy peanut butter
salt
1 (12-ounce) box crisp rice cereal
4 cups (2 12-ounce bags) semi-sweet chocolate chips
8 tablespoons (1 stick) butter, cut into ½-inch cubes
1½ cups (6 ounces) confectioners’ sugar
¼ cup water

1. Spray a 9-by-13 inch pan with cooking spray.

2. In a large (at least 5-quart) pot over medium-low heat, melt the butterscotch chips with the peanut butter and ¼ teaspoon salt. When the mixture is smooth, which will take 8-10 minutes, add the cereal and stir to thoroughly coat the cereal with the peanut butter mixture.

3. Meanwhile, bring 1-inch of water to a simmer in a saucepan. Place the chocolate, water, 1/8 teaspoon salt, and butter in a heatproof bowl and set it over the simmering water. Stir occasionally until the chocolate is melted and smooth, 6-8 minutes. Stir in the powdered sugar.

4. Transfer half of the cereal mixture to the prepared pan; use a rubber spatula or greased hands to pat the mixture into an even layer, pressing lightly to compact. Spread the chocolate mixture evenly over the cereal in the pan. Top with the remaining cereal mixture. Cover lightly with plastic wrap and refrigerate until set, about 2 hours.

Normally I wouldn’t waste your time describing such a mistake, but this recipe was on my list of 2012 goals for February.

Dave opens doors for me and buys me little surprises, but Sunday he really went all out when he offered to clean up the kitchen while I baked a cake. Then he indulged me when I brought the baked cake to him and exclaimed, “Smell this! Just like a chocolate chip cookie, right?!” over and over. And then, even though his favorite desserts are fruity and custardy and pretty much the opposite of chocolate chip bundt cake, the next day, we had this conversation over gmail chat:

me: tell me some more about how awesome my cake is.
David: very moist
and delicious

Dave might have preferred Dorie Greenspan’s original fruit and nut version, posted on Peggy’s site, but the dough is so similar to chocolate chip cookie dough that I couldn’t resist adding 8 ounces of chocolate instead. I’m fairly certain I made the right choice. (I also increased the salt to 1 teaspoon.)

Mise en place while baking is not my favorite. My favorite is to measure out the sugar while the butter is whipping, crack open the eggs while the sugar aerates the butter, mix the dry ingredients while the eggs are incorporated, cut open the bag of chips while pulsing the flour into the mixture. And then I eat a spoonful of dough. That’s my idea of a good time.

Chopping interrupts this perfect process. The cherries stick to the knife and the chocolate shatters onto the floor, and it certainly can’t be finished by the time the eggs are blended into the butter. But for some cookies, it’s worth it a few minutes of chopping before I get to the fun part of adding ingredients to the mixer.

For the first oatmeal cookies I ever loved, I can handle chopping a few ingredients. One thing that makes these more lovable than your average oatmeal cookie is chocolate (much like the second oatmeal cookies I ever loved). The other treat is tart dried cherries instead of boring raisins. The pecans add bitterness and the oats contribute to chewiness. It might take five more minutes than some desserts, but it makes for a much more interesting cookie.

Chocolate-Chunk Oatmeal Cookies with Dried Cherries and Pecans (from Cooks Illustrated)

Makes sixteen 4-inch cookies

CI note: We like these cookies made with dried sour cherries, but dried cranberries can be substituted for the cherries. Quick oats used in place of the old-fashioned oats will yield a cookie with slightly less chewiness. If your baking sheets are smaller than the ones described in the recipe, bake the cookies in three batches instead of two. These cookies keep for 4 to 5 days stored in an airtight container or zipper-lock plastic bag, but they will lose their crisp exterior and become uniformly chewy after a day or so.

1¼ cups (6¼ ounces) unbleached all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon table salt
1¼ cups (6⅓ ounces) rolled oats, old-fashioned
1 cup pecans, toasted
1 cup dried tart cherries (5 ounces), chopped coarse
4 ounces bittersweet chocolate, chopped into chunks about size of chocolate chips (about ¾ cup)
12 tablespoons (1½ sticks) unsalted butter, softened but still cool
1½ cups (10½ ounces) packed brown sugar, preferably dark
1 large egg
1 teaspoon vanilla extract

1. Adjust oven racks to upper- and lower-middle positions; heat oven to 350 degrees. Line 2 large (18 by 12-inch) baking sheets with parchment paper.

2. Whisk flour, baking powder, baking soda, and salt in medium bowl. In second medium bowl, stir together oats, pecans, cherries, and chocolate.

3. In standing mixer fitted with flat beater, beat butter and sugar at medium speed until no sugar lumps remain, about 1 minute. Scrape down sides of bowl with rubber spatula; add egg and vanilla and beat on medium-low speed until fully incorporated, about 30 seconds. Scrape down bowl; with mixer running at low speed, add flour mixture; mix until just combined, about 30 seconds. With mixer still running on low, gradually add oat/nut mixture; mix until just incorporated. Give dough final stir with rubber spatula to ensure that no flour pockets remain and ingredients are evenly distributed.

4. Divide dough evenly into 16 portions, each about ¼ cup, then roll between palms into balls about 2 inches in diameter; stagger 8 balls on each baking sheet, spacing them about 2½ inches apart. Using hands, gently press each dough ball to 1 inch thickness. Bake both baking sheets 12 minutes, rotate them front to back and top to bottom, then continue to bake until cookies are medium brown and edges have begun to set but centers are still soft (cookies will seem underdone and will appear raw, wet, and shiny in cracks), 8 to 10 minutes longer. Do not overbake.

5. Cool cookies on baking sheets on wire rack 5 minutes; using wide metal spatula, transfer cookies to wire rack and cool to room temperature.

Back when we lived in a city with stores and restaurants and all of that, we used to go to the bookstore every Saturday afternoon to browse and drink fancy coffee. From there we’d head over to the huge grocery store for a sushi snack and whatever ingredients I’d forgotten on my main grocery trip. The whole outing – low-key but full of treats – was one of my favorite parts of the week.

These days, we adapt that routine for our trips up to Albuquerque, where we seem to end up once every couple of months to visit my family. We take a portion of a day to head to the bookstore, and then while Dave sits and reads a book, I go next door to Whole Foods to stock up on coffee, loose-leaf tea, chocolate, and cheese. The coffee, tea, and chocolate keep well, but we eat a lot of cheese in the week after those trips.

That’s why it isn’t unusual for me to have five different types of chocolate lying around. It is unusual that one of those will be milk or white chocolate, which is how these ended up being quadruple chocolate brownies instead of quintuple. Similarly, it’s how the tiny bit of white chocolate that was all I had got added as chunks instead of melted as a glaze.

Whether quintuple or quadruple, these are some of the best brownies I’ve ever had. They certainly weren’t cakey, and yet they weren’t really chewy either. They were melt-in-your-mouth tender, and with four types of chocolate, you know they had great flavor.

Quintuple Chocolate Brownies (from Dorie Greenspan’s Baking: From My Home to Yours)

I skipped the nuts and glaze and stirred the white chocolate chunks into the batter.

For the Brownies:
½ cup all-purpose flour
¼ cup unsweetened cocoa powder
½ teaspoon salt
1 stick (8 tablespoons) unsalted butter, cut into 8 pieces
3 ounces unsweetened chocolate, coarsely chopped
3 ounces bittersweet or semisweet chocolate, coarsely chopped
2 tablespoons strong coffee
1 cup sugar
3 large eggs
1 teaspoon pure vanilla
6 ounces premium-quality milk chocolate, chopped into chips, or 1 cup store-bought milk chocolate chips
1 cup chopped nuts (I used walnuts)

For the Glaze:
6 ounces premium-quality white chocolate, finely chopped, or 1 cup store-bought white chocolate chips
⅓ cup heavy cream

Getting Ready:
Center a rack in the oven and preheat the oven to 325 degrees F. Line a 9-inch square baking pan with foil, butter the foil and place the pan on a baking sheet.

Sift together the flour, cocoa, and salt.

To Make the Brownies:
Set a heatproof bowl over a saucepan of simmering water and add, in the following order, the butter, the two chocolates and the coffee. Keeping the pan over low heat, warm just until the butter and chocolates are melted – you don’t want the ingredients to get so hot they separate, so keep an eye on the bowl. Stir gently, and when the mixture is smooth, set it aside for 5 minutes.

Using a whisk or a rubber spatula, beat the sugar into the chocolate mixture. Don’t beat too vigorously – you don’t want to add air to the batter – and don’t be concerned about any graininess. Next, stir in the eggs one at a time, followed by the vanilla. You should have a smooth, glossy batter. If you’re not already using a rubber spatula, switch to one now and gently stir in the dry ingredients, mixing only until they are incorporated. Finally, stir in the milk chocolate chips and the nuts. Scrape the batter into the pan.

Bake for about 35 minutes, or until a thin knife inserted into the center comes out streaked but not thickly coated. Transfer the pan to a cooling rack and let the brownies rest undisturbed for at least 30 minutes. (You can wait longer, if you’d like.)

Turn the brownies out onto a rack, peel away the foil and place it under another rack – it will be the drip catcher for the glaze. Invert the brownies onto the rack and let cool completely.

To Make the Glaze:
Put the white chocolate in a heatproof bowl. Bring the heavy cream to a boil and pour it over the chocolate. Wait 30 seconds, then, using a rubber spatula, gently stir until the chocolate is melted and the glaze is smooth.

Hold a long metal icing spatula in one hand and the bowl of glaze in the other. Pour the glaze onto the center of the brownies and use the spatula to nudge it evenly over the surface. Don’t worry if it dribbles over the edges, you can trim the sides later (or not). Refrigerate the brownies for about 20 minutes to dry the glaze.

Cut into 16 squares, each roughly 2¼ inches on a side.

Note: These brownies can be frozen (even with the glaze) for up to two months. They can be stored at room temperature or enjoyed cold from the refrigerator.

oreo cheesecake cookies

I was feeling a bit crabby last week. I’ve been teaching in the evenings after work, which has fun aspects, but preparing lectures, grading labs, writing exams, and going to class has been seriously cutting into my kitchen time. I can’t remember the last time I baked an impromptu batch of cookies – when I had no one planned to eat my treats, when I saw a recipe and realized I had all of the ingredients lying around, when I had a spare hour or so to make a mess in the kitchen. No wonder I was feeling out of sorts.

Now that the semester is over, I have lofty goals of keeping my house cleaner, exercising more rigorously, and learning everything from the basics of Italian to the ins and outs of Photoshop. But the truth is that I’ll probably spend the bulk of my new spare time in the kitchen playing with butter, flour, and sugar.

And cream cheese, if I’m lucky. As soon as someone says cream cheese, my ears perk up. And it’s all the better if it’s combined with oreos. These cream cheese cookies rolled in oreo crumbs are a fun take on that combination. There’s no egg in the dough, which not only simplified halving the recipe to use the odd bits and ends I had laying around, but gave the cookies a soft texture reminiscent of shortbread. Overall, they were the perfect way to end a baking dry period and put me in a better frame of mind.

Oreo Cheesecake Cookies (rewritten from multiplydelicious)

Makes about 30 cookies

8 tablespoons (1 stick) unsalted butter, softened
3 ounces cream cheese, softened
½ teaspoon salt
1 cup (7 ounces) sugar
1 teaspoon vanilla extract
1 cup (4.8 ounces) all-purpose flour
½ cup mini chocolate chips
1 cup oreo cookie sandwich crumbs (about 8 oreos)

1. Heat the oven to 375 degrees. Line 2 baking sheets with parchment paper or silicone mats.

2. In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if using a hand mixer), beat the butter, cream cheese and salt on medium-low speed until smooth and creamy. Gradually add the sugar and continue beating until the mixture is light and fluffy, 1-2 minutes. Beat in the vanilla, and then add the flour and mix on low just until combined. Mix in the chocolate chips.

3. Roll the dough into 1-inch balls. Drop the dough balls into a bowl of oreo cookie crumbs and roll to coat. Arrange the dough balls 2 inches apart on the prepared baking sheets.

4. Bake the cookies for 8-10 minutes, until the edges just start to brown and the tops are set. Cool for a minute or two on the sheets, then transfer the cookies to wire racks and cool completely.

Oh, coffee. I love it. I love how the bitterness offsets anything sweet, especially a scone or the foamed milk of a cappuccino. I love how, because I only drink it on weekends, it’s always a treat. I love that little buzz that makes me feel like life is the most awesome awesomeness of awesome ever.

I do not like when that buzz goes too far, so that my thoughts are too scrambled to go beyond Bzzzzt. I do not like when it irritates my stomach. I do not like lying awake at night regretting the mug I drank ten hours ago.

Coffee and I, we have a complicated relationship. I like it, but I have to be very, very careful with it. Which, come to think of it, is how I feel about dessert too. These crisp-tender distinctively coffee-flavored cookies were no exception, although in this case, I had even more reason to try to resist.  No one wants to be up all night because they ate cookies after dinner!
